What makes sticky chai so sticky (and so delicious)?
If you’ve ever scooped up a spoonful of sticky chai into your teapot, you might have noticed its rich, glistening texture and deep aroma.
Unlike regular loose-leaf chai, sticky chai has a natural bind that makes it extra special.
But what exactly gives it that signature stickiness, and why does it make for such a great cup of chai?
At The Chai Room, I make my sticky chai using raw honey from a small farm in Murrimbah, NSW, and organic coconut nectar, sourced locally.
These natural sweeteners not only help bind the aromatic spices together but also add layers of flavour that make each sip extra tasty.
The secret to my sticky chai: Natural sweeteners
Sticky chai is a mix of high-quality black tea leaves, whole or crushed spices, and a natural sweetener that gives it its signature texture.
Unlike dry chai blends with loose ingredients mixed, sticky chai is gently coated in a sweet, syrupy binder.
This helps lock in the flavours and gives you a richer, more aromatic brew.

Raw honey: Nature’s sweet gift
One of the key ingredients in my sticky chai is raw honey sourced from a beautiful little farm in Murrimbah, NSW.
Unlike processed honey, raw honey keeps all its natural goodness, enzymes, vitamins, and antioxidants intact. But more importantly, it plays a big role in making my chai taste amazing
Keeps it fresh
Raw honey helps hold everything together, keeping the spices from drying out so they stay bold and fragrant.
Enhances the flavour
Its rich floral and caramel notes bring out the best in black tea and spices like cinnamon, cardamom, and cloves.
Adds a health boost
Raw honey has natural antibacterial and anti-inflammatory properties, so it’s good for you too!

Organic coconut nectar: The vegan-friendly sweetener
For a plant-based alternative, I use organic coconut nectar, sourced from local producers.
It’s made from the sap of coconut blossoms and has a beautiful caramel-like sweetness.
Sustainably sourced
Harvested without harming coconut trees, making it an eco-friendly choice.
Gentle on blood sugar
It has a lower glycemic index than refined sugar, so no sugar crashes here.
Adds a richer depth
The subtle toffee and butterscotch notes of the coconut nectar blend beautifully with our spice mix.
Why sticky chai is worth trying
Now that you know what makes sticky chai sticky, let’s talk about why it’s a great choice for a chai tea.
1. Bigger, bolder flavours
The combination of tea, spices, and natural sweeteners creates a chai tea that’s richer, smoother, and way more aromatic.
The natural sweeteners help bring out the essential oils in the spices, making them even more flavourful when brewed.
2. A more enjoyable brewing experience
Brewing sticky chai is a treat in itself.
Whether you simmer it on the stovetop with milk or steep it in hot water, the honey or coconut nectar melts slowly, releasing all those gorgeous flavours.
3. Naturally stays fresh
My sticky chai is coated in honey or coconut nectar so it doesn’t dry out like regular chai blends.
Every scoop is packed with fresh, aromatic goodness just for you.
4. A healthier sweetening option
Instead of relying on processed sugars, sticky chai naturally incorporates raw, unprocessed sweeteners that add both taste and a little extra nutrition.
Whether you prefer the antioxidant benefits of raw honey or the low-GI goodness of coconut nectar, you’re making a great choice either way.
